Watermelon, Feta, and Mustard Seed Dressing Salad

INGREDIENTS
- • 4 cups (600g) seedless watermelon, cut into cubes or balls (see note)
- • 2 cups wild arugula leaves
- • 1 package (200g) feta cheese, cut into cubes
- • 2 tablespoons olive oil
- • 2 tablespoons mustard seeds (sinapi)
- • 2 tablespoons honey
- • 1/3 cup white balsamic vinegar
- • 1 teaspoon salt
METHOD
- 1. In a bowl, combine the olive oil and mustard seeds and mix. Add the honey, white balsamic vinegar, mix, and add the salt.
- 2. Mix well until the salt dissolves and set aside.
- 3. On a nice serving platter, arrange the wild arugula, watermelon, and feta, then drizzle with the dressing.
