1. In a medium bowl, combine all the dry ingredients (oats, flour, baking powder, and cinnamon) and set aside. In another bowl, combine all the wet ingredients (honey, egg, and butter) and mix until they are incorporated.
Place the bowl with the dry ingredients in front of you and start mixing lightly, while gradually adding the wet mixture and combining everything. Next, finely chop the apple and add it to the mixture.
2. Place the mixture in the refrigerator for about 30 minutes so that the ingredients bind and firm up, preventing the cookies from spreading while baking.
Remove the mixture from the fridge, take a small amount, roll it into a ball first, and then press it down to form your cookie.
3. Place them on a baking sheet lined with non-stick parchment paper and bake at 180°C for 10 minutes. Let them cool before enjoying.
