Mediterranean Tuna Salad for the Office with Tuna in Water
INGREDIENTS
• 2 cans (2X160g) tuna in water
• ½ head of iceberg lettuce
• ½ bunch of parsley
• ½ bunch of fresh spearmint
• 2-3 spring onions
• 1 dry onion
• 1 green pepper
• 2-3 small cucumbers
• 10 cherry tomatoes
• 20 black olives
• 1 teaspoon salt
• 2 lemons, juice of
• ¼ cup olive oil
• 1 package (200g) feta cheese
METHOD
1. Drain the tuna and place it in a bowl. Coarsely chop the iceberg lettuce and finely chop all the vegetables (parsley, spearmint, spring onions, dry onion, green pepper, and cucumber). Add them to the tuna.
2. Cut the cherry tomatoes into 3-4 thick slices and remove the pits from the olives. Add them to the rest of the vegetables and mix.
3. In a small jar, mix the salt, lemon juice, and olive oil. Shake well and pour over the salad. If you are not fasting, crumble the feta cheese on top.
