• 1/2 cup (100g) powdered sugar, plus extra for dusting
• 1/2 package (125g) unsalted butter, cold and cut into cubes
• 3 egg yolks, (M)
• 1 teaspoon (5g) vanilla extract or 2 packets of vanilla powder
• 1/2 cup apricot or strawberry jam
METHOD
1. In a bowl, combine the Farina flour, almond flour, powdered sugar, and butter. Rub the mixture with your fingertips until coarse crumbs, like sand, form. Add the egg yolks and vanilla. Mix until you have a soft dough. Shape it into a thick disc, wrap it in plastic wrap, and chill in the refrigerator for 1 hour.
2. Dust your work surface with cornstarch or flour, and place the dough on top. Dust the top with flour or cornstarch as well. Roll out the dough with a rolling pin to a large sheet about 3 millimeters thick. Use a cookie cutter to cut half the cookies into rounds, 4-5 cm in diameter, and the other half into rounds with a hole in the middle (you can use any shape you like). Carefully place them on the baking sheet using a spatula so as not to spoil their shape, and bake in a preheated oven at 160°C for about 15 minutes, or until lightly golden. Remove them and let them cool before moving them from the tray.
3. Spread a little jam of your choice on the bottom cookie and cover it with another cookie that has a small hole in the center. Arrange them on a platter and, if you wish, dust them with powdered sugar.
