Halloween: Chocolate Spider Web Cookies
INGREDIENTS
• ½ package (125g) butter, at room temperature
• ½ cup (115g) sugar
• ½ cup (80g) light brown sugar
• 1 egg (Medium)
• 1 teaspoon (5g) vanilla extract
• 1 cup (150g) all-purpose flour
• ¼ cup (25g) cocoa powder
• 1 tablespoon (15g) cornstarch
• ½ teaspoon (4g) baking soda
• ½ teaspoon (3g) salt
For the topping
• 12-15 marshmallows
METHOD
1. In a bowl, sift together the flour, cocoa powder, cornstarch, and baking soda. Mix in the salt.
2. In another bowl, combine the butter and both types of sugar. Mix with a spatula until incorporated and fluffy. Add the egg and vanilla and continue mixing. Gradually add the flour mixture to the butter mixture. Then, mix in the chocolate chips. Using an ice cream scoop, take about 40g of dough per cookie and shape it into a ball. Place them on a baking sheet lined with parchment paper. Put them in the freezer for 1 hour. Take them out and arrange them on a baking sheet with parchment paper, leaving about 3cm space between them. Let them thaw for 15 minutes, then bake at 180°C for 7 minutes or until the edges are lightly browned. Let them cool completely before moving them from the tray, as they will be soft right out of the oven.
3. Melt the marshmallows in the microwave for ½ - 1 minute. Take them out and stir them with a fork. Take a small amount of the mixture and stretch it out like a web. Stick it onto the cookies.
