1. Take the colocasia stems (poulies) and wipe them with a paper towel to remove any dirt or roots. Rinse them well. Place the stems in a pot, add water, and boil until cooked. Let them cool down and peel them.
2. Cut them into small pieces and place them in a salad bowl. Add finely chopped coriander, salt, juice from a citron if it is in season, otherwise lemon juice, and olive oil.
