1. Knead all ingredients together (flour, oil, salt, and water) to make a soft dough so that when we roll out our sheets, we don't need to add much extra flour (the kattimeria will harden when baked).
2. Let the dough rest for at least 30 minutes. The longer you let the dough rest, the softer the kattimeria become. Divide the dough into 12 pieces.
3. Take one piece of dough and roll it out into a very thin sheet. Brush with olive oil, add cinnamon (if you like) and preferably sugar. Fold it like an envelope and bake it on a saj or non-stick pan over medium heat, turning frequently until cooked through.
