• 2 cup 520g Mashed Bananas (about 6 medium Cypriot bananas)
• 1 cup 700g Coarsely Chopped Walnuts
METHOD
1. Preheat the oven to 180°C (350°F) and grease and flour a rectangular loaf pan measuring 11x30cm. In a bowl, sift together the flour, cocoa, baking powder, and vanilla sugar, then add the salt. Mix well.
2. In the mixer bowl, place the eggs and sugar and beat until light and fluffy. Add the vegetable oil, tahini, honey, and mashed bananas, and continue mixing.
Reduce the speed and add 2/3 cup of the coarsely chopped walnuts, then gradually add the flour mixture, a spoonful at a time. Pour the batter into the loaf pan and smooth the surface with a spatula. Sprinkle with the remaining walnuts and bake in the preheated oven for 50-55 minutes.
