Whole Wheat Tortilla 'Pizza' with Trata Tuna

INGREDIENTS
- • --- 4 whole wheat tortillas, 20cm
- • --- 3 cans (3x160g) Trata tuna in water
- • --- 1 package (250g) lightly concentrated tomato puree
- • --- 2 tablespoons olive oil
- • --- 1 tablespoon oregano
- • --- 1/2 teaspoon thyme (optional)
- • --- ½ teaspoon garlic powder
- • --- 1 level teaspoon salt
- • --- ¼ teaspoon black pepper
- • --- ½ cup black olives, sliced
- • --- 1 sweet green pepper, thinly sliced
- • --- 2 tablespoons capers, well rinsed and drained
- • --- 1 package (200g) shredded mozzarella
- • --- A handful of fresh wild rocket
METHOD
- 1. Preheat the oven to 200°C and arrange the tortillas on a baking sheet lined with parchment paper.
- 2. In a small bowl, mix the lightly concentrated tomato puree, olive oil, oregano, thyme, garlic powder, salt, and pepper. Spread a generous amount of tomato sauce over the tortillas.
- 3. Add the mozzarella, then top with the tuna, which you should have drained very well and gently broken apart with your fingers. Scatter the olives, pepper, and capers.
- 4. Sprinkle with a little extra mozzarella and bake in the preheated oven for about 10 minutes, or until the cheese is melted and the edges of the tortillas are golden.
- 5. Remove from the oven and garnish with fresh wild rocket.
