Stuffed Mini Cucumbers with Smoked Salmon Mousse

INGREDIENTS
• 50g smoked salmon
• 200g cream cheese
• 5 large mini cucumbers
• Zest of ½ lime
• Juice and zest of ½ orange
• Ground black pepper
• 1 tablespoon chopped chives
• 1 package fresh red currants
METHOD
1. In a blender, place the smoked salmon, cream cheese, the zest and juice from the orange, the lime zest, and the pepper.
2. Blend until you have a creamy mousse. Cut the mini cucumbers into pieces about 3-4 centimeters thick and scoop out about three-quarters of the inside using a small spoon or a special tool.
3. Transfer the mixture to a piping bag and fill the cucumber pieces. Garnish the top with the red currants and chives.
