1. Place the AENO GASTROLAB on the scale function. Weigh all ingredients. If you prefer, weigh the ingredients directly into the bowl. Insert the mixing/chopping attachment and add the tahini, garlic, and half the amount of lemon juice to the bowl. Close the bowl and select the Food Processor function. Process for 30 seconds at speed 6.
2. Scrape down the tahini from the sides of the bowl with the spatula. Close the lid and add the remaining lemon juice, the salt, and process for 1 minute at speed 6, gradually pouring in the water.
3. Open the bowl, scrape down any residue from the sides, taste, and if you want a fluffier texture, process for an additional 30 seconds. Serve the tahini garnished with the finely chopped fresh parsley.
