1. Place the flour and salt in the mixer bowl and mix. Add the yeast, sugar, mix, and then pour in the olive oil. Rub the mixture with your palms until coarse crumbs form.
2. Gradually add the lukewarm water and knead. Add the sihinno (mastic tree berries) and raisins, and knead well until they are fully incorporated into the dough.
3. Cover the bowl and set aside to rise for 1 hour. Take a small amount of dough and roll out thin, round pites (flatbreads). Place them on a baking tray lined with non-stick parchment paper. Bake in a preheated oven at 180°C (fan-assisted) for 25-30 minutes, depending on their size.
4. Turn off the oven and leave the sihinopites inside. Turn the oven back on to 50°C and continue baking for 15-20 minutes on each side, or until they reach your desired crispiness.
5. Instead of sihinno (mastic tree berries), you can make them with tremithia (terebinth berries).
