• 3 cups (465g) salted and roasted peanuts, shelled
• 2 cups (250g) sesame seeds
• 1 cup (200g) sugar
• 1/2 cup (175g) honey
• 2 tablespoons (20ml) lemon juice
METHOD
1. Toast the sesame seeds in a pan for 20 minutes, stirring so they brown evenly. Let them cool.
Put the sugar and honey in a medium saucepan. Place over high heat and stir constantly until the sugar dissolves (30-40 seconds). Reduce the heat and boil for 4 minutes, stirring continuously.
2. Add the lemon juice, sesame seeds, and peanuts. Stir continuously for 2 minutes.
Transfer the mixture onto the baking sheet lined with parchment paper and spread it out using a spoon dipped in a little vegetable oil. If you have a small rolling pin, grease it with vegetable oil and use it to press the mixture evenly.
3. Score the pasteli (sesame bar) with a pizza cutter. Let it cool for another half hour and then cut it completely.
Store in an airtight container.
