Chocolate Molten Cake (Moelleux au Chocolat)

INGREDIENTS
• 170g couverture chocolate
• 150g unsalted butter
• 4 eggs
• 160g sugar
• 65g sifted self-raising flour or all-purpose flour
• 1 - 2 bananas (optional)
METHOD
1. Place the chocolate and butter over a double boiler (bain-marie) or in the microwave until melted, then set aside for a moment.
2. In the mixer bowl, add the eggs and sugar and beat at medium to high speed until light and fluffy.
3. Once the eggs and sugar are ready, reduce the mixer speed to low and slowly pour in the melted chocolate and butter mixture in a steady, thin stream. Finally, gently fold in the sifted flour using a spatula.
For Baking:
1. Take small glass oven dishes (ramekins), butter them well, and dust the bottom and sides with sugar.
2. Fill the ramekins about 3/4 full with the cake mixture. If desired, slice bananas and place them on top. Bake at 200°C (392°F) for 15-20 minutes, depending on your oven. The center should remain gooey/liquid.
3. After letting them cool slightly, invert them onto a plate. Serve with coffee or vanilla ice cream.
