Salmon Ceviche with Avocado and Citrus

INGREDIENTS
• 300 gr fresh salmon, cleaned and cut into small cubes
• 1 red bell pepper, finely chopped
• 1 yellow bell pepper, finely chopped
• 1 chili pepper, finely chopped (adjust quantity according to your preference for spiciness)
• 1 avocado, diced
• Juice of 2 limes
• Juice of 2 oranges
• 1 tablespoon freshly grated ginger
• 3 tablespoons olive oil
• 1 teaspoon coarse salt
• Coriander or parsley leaves for garnish
METHOD
1. In a bowl, place the cubed salmon and pour over the lime and orange juice. Mix well and let it marinate in the refrigerator for 15-20 minutes. The citrus juice will 'cook' the salmon.
Meanwhile, finely chop the peppers (red, yellow, and chili) and the avocado.
2. Add the peppers, avocado, and grated ginger to the bowl with the salmon. Drizzle the mixture with olive oil and add the coarse salt. Mix gently so that all ingredients are combined.
3. Let the ceviche sit in the refrigerator for another 10 minutes so the flavors can meld.
Serve in bowls or small plates, garnishing with fresh coriander or parsley leaves.
