1. Wipe the mushrooms clean with a damp paper towel or cloth. Be careful, never wash mushrooms as they absorb too much water. Cut the mushrooms in half. If they are large, cut them into 4 pieces.
2. Pour the seed oil into a saucepan and sauté the mushrooms until nicely browned, about 10 minutes. Remove any excess oil and add the wine. Let it reduce by half, then add the salt, pepper, and coriander.
3. Cook the mushrooms until the wine has completely evaporated and they are browned. This is a recipe that shouldn't be missing from any Cypriot home. The coriander and wine are characteristic ingredients of our place.
