Recipe by Stalo Georgiou Dirri, owner of Stalicious Kitchen
INGREDIENTS
• 6 hard-boiled eggs
• 250g of panná (pork caul/fatty membrane)
For the minced meat mixture
• 1 kg minced pork
• 2 eggs
• 1 medium onion
• chopped parsley
• 2 tablespoons olive oil
• 1 large grated red tomato
• 2 slices of bread
• 1/2 cup milk
• 2 tablespoons Mild mustard
• salt, pepper
• cinnamon
• dill
• oregano
For the potatoes
• 6 potatoes with olive oil
• salt, pepper
• 1 grated red tomato
• 1 onion cut into rings
METHOD
For the roll:
1. Rinse the panná well with vinegar and lemon. Chop the bread and put it in a bowl. Pour in the milk and let it soak. Peel the eggs.
2. Knead the minced meat with all the ingredients. Place a piece of panná on a tray and spread it out. Spread ¼ of the meat mixture and place 3 eggs in the center.
3. Cover with another ¼ of the meat mixture and roll up the panná. Repeat the same process with the remaining ingredients.
For the potatoes:
1. Cut them into slices and mix them with all the remaining ingredients. Place the rolls in a baking pan and arrange the potatoes around them. Add a little water.
2. Cover the pan well. Bake in a preheated oven at 200°C for about 2 hours.
3. Remove the cover and continue baking until our food is nicely browned.
