1. In a bowl, combine the sunflower oil and sugar, and whisk with a whisk until the sugar dissolves.
2. Add the zest and the baking soda, which you dissolve in the mandarin juice until it becomes frothy. In a separate bowl, mix the flour, vanilla, and baking powder.
3. Gradually add the dry mixture into the mandarin juice mixture, stirring until you have a soft dough.
4. Let the dough rest for 2 hours. Take 25g of dough and shape it into a cookie or a braid. If you like, top it with mandarin preserve or strips of candied mandarin.
5. Bake in a preheated oven at 180°C for about 20 minutes, or until golden brown.
