1. In a large bowl, sift the flour, reserving 3 tablespoons. In those 3 tablespoons, mix the yeast and 1 teaspoon of sugar, dissolve with a little lukewarm water, and let it activate for 10 minutes. To the flour, add the rest of the sugar and the cinnamon, mix, and finally add the activated yeast mixture and the olive oil.
2. Knead well. If necessary, add a little flour or water until you have a soft, pliable dough. Cover with plastic wrap and let it rise for 1 hour. Oil your hands and shape the 'klikia' (dough rings). Roll out a small rope of dough, form it into a ring, and secure the ends at the join.
3. Place them on a clean kitchen towel. Once all the dough is shaped, fry them until golden brown. Serve with honey and cinnamon.
