• 2/3 cup green apple, grated on the coarse side of the grater and drained
• 2/3 cup onion, grated on the coarse side of the grater
• 1 cup finely chopped parsley
• 4 - 5 tablespoons oats
• 2 eggs
• 1 heaping tablespoon whole grain mustard
• 2 tablespoons ketchup
• 1 tablespoon cumin (spice)
• 1/3 cup olive oil
• 1 teaspoon salt
• 1 pinch pepper
For Serving
• 20-22 slices of cheddar cheese
• Burger buns
• mayonnaise
• ketchup
METHOD
1. Place all the ingredients for the patties in a bowl and mix very well. If necessary, add a little more oats until a fluffy dough that can be shaped forms. Be careful, grate the apple at the last moment so it doesn't turn brown. Cover the mince and place it in the refrigerator for 1 hour.
2. Take about 75g of the mixture and form about 20-22 patties. Place them on 2 large baking trays and bake in a preheated oven at 180°C (350°F) for 20 minutes. Take them out of the oven and place the cheese on top, carving spooky Halloween faces onto it with a knife. Continue baking for another 5 minutes, or until the cheese melts.
3. Remove from the oven. Cut the burger buns in half and spread one half with mayonnaise and the other with ketchup. Place a patty with cheese on top and serve.
