1. Grate the halloumi cheese using the coarse side of the grater (the mandoline side). Basically, we want thin slices. Alternatively, you can slice them with a knife. Preheat the oven to 180°C (350°F) and grease and flour a rectangular pan measuring 11x30cm.
2. In a bowl, crack the eggs one by one to check for any bad ones, and beat them well until fluffy. Add the sunflower oil and milk. Stir, then add the flour and baking powder. Mix well and then add the halloumi and fresh mint. Pour the cheese mixture into the prepared pan and spread it evenly with a spatula.
3. Sprinkle the surface with the sesame seeds. Bake in the preheated oven for 40 minutes.
