Gratin Potatoes with Cured Meats and Cheeses

INGREDIENTS
• 1 cup kg potatoes (approximately)
• 5-6 slices of lountza (smoked pork loin)
• 1 cup cooked cracked wheat (Sitaropoula)
• a little salt
• 1 teaspoon mixed herbs (oregano, thyme, etc.)
• 1 ½ can (600ml) evaporated milk
• 4 cups (400g) mixed grated cheeses
METHOD
1. Peel the potatoes, rinse them, and slice them into thin rounds. Place them in a baking dish. Finely chop the lountza and place it over the potatoes. Add the cracked wheat and sprinkle with salt and the mixed herbs.
2. Pour the evaporated milk over everything and bake in a preheated oven at 180°C for 40 minutes.
3. Remove from the oven and add half of the grated cheese. Stir gently and sprinkle the surface with the remaining cheese. Continue baking for another 20 minutes or until the top is nicely browned.
