Flavounopita (Cheese and Spice Cake)

INGREDIENTS
- • 8 eggs
- • ¾ cup sunflower oil
- • 1 cup milk
- • 3 teaspoons sugar
- • 5-6 mastic grains
- • 2-3 mahlab grains
- • 3 ½ cups grated halloumi (grated finely)
- • 1 tablespoon dried mint
- • 1/3 teaspoon black pepper
- • 1/3 cup fresh chopped mint
- • 2 ½ - 3 cups Self Raising Flour
- • 3 teaspoons baking powder
- • 1 cup raisins
METHOD
- 1. In the mixer bowl, place the eggs, oil, milk, and sugar. Beat until fluffy. In a mortar or small blender, place 2 tablespoons of sugar, the mastic, and the mahlab. Grind well.
- 2. Add the ground mixture to the eggs and then add the halloumi and black pepper. Add the flour, baking powder, and beat well.
- 3. Take the bowl off the stand mixer and fold in the fresh mint and raisins.
- 4. Mix with a wooden spoon and pour the batter into a large, greased and floured ring mold (bundt pan).
- 5. Bake in a preheated oven at 180°C (350°F) for 45-50 minutes. To check if it's done, insert the tip of a knife into the center of the cake; if it comes out clean, it's ready.
