•1/3 cup (120g) honey or grape molasses (petimezi)
•2/3 cup (60g) coarsely chopped walnuts
•2 cups (500ml) lukewarm water
METHOD
1. Grease and flour 2 rectangular loaf pans. In a large bowl, or more easily in the bowl of a mixer, place the flour and salt. Stir and add the dry yeast. Add the olive oil and mix. If doing it by hand, rub with your fingers until coarse crumbs form. Add the honey or molasses and mix.
2. Gradually pour in the water and knead until you have a soft dough. Add the walnuts and knead until they are incorporated into the dough. Sprinkle the counter with a little flour, knead the dough by hand, and divide it into 2 pieces.
3. Shape them into a rectangular form matching your loaf pans. Place them in the baking pans and brush with a little olive oil. Cover with a towel and let them rise for 1 – 1 ½ hours. Score the surface with a knife or blade so the air escapes evenly. Bake in a preheated oven at 180°C for 40-45 minutes.
