For the starter dough
- • 3 cups Pastry Flour
- • 2 sachets (16g) yeast
- • 6 tablespoons sugar
- • 1 ½ cups lukewarm milk
For kneading
- • ¾ package (190g) unsalted butter
- • 3 egg yolks, 4-5 cups Pastry Flour
- • 1 cup lukewarm milk
