•½ package (100g) feta cheese, crumbled into large pieces
•1 cup (200g) unsalted anari cheese, crumbled
•
½ cup (15g) fresh mint, finely chopped
•3 cups (450g) self-raising flour
•3 teaspoons (24g) baking powder
•½ teaspoon mastic powder
•6 eggs (medium)
•2/3 cup (170g) vegetable oil (e.g., sunflower oil)
•1 can (400g) evaporated milk
•2 tablespoons (20g) sesame seeds
METHOD
1. Grease and flour a round bundt pan. Preheat the oven to 180°C. In a bowl, combine the halloumi, Edam, feta, anari, and mint. Mix well. In another bowl, combine the flour, baking powder, and mastic. Mix.
2. In a mixer, beat the eggs very well until light and fluffy. Add the vegetable oil and evaporated milk, and continue beating.
3. Lower the mixer speed and gradually add the cheese mixture and then the flour mixture, a little at a time. Stop the mixer, scrape down the mixture with a spatula, and transfer it to the pan. Sprinkle with the sesame seeds.
