Antinachtes Potatoes (Sautéed/Braised Potatoes)

INGREDIENTS
• 1 kg small potatoes (Baby)
• 2 cups dry red wine
• 3 tablespoons crushed dry coriander
• 1 cup olive oil
• Salt
• A little water
METHOD
1. Rinse the potatoes well and score them with a knife. Place them in a bowl and pour in the wine and 2 tablespoons of coriander. Let the potatoes marinate for 5-6 hours. Strain the potatoes and let them dry.
2. Add the olive oil and sauté the potatoes. Pour in the wine, and when the alcohol evaporates, add salt and a little water to cover the potatoes.
3. Boil until the water evaporates and the potatoes are left coated in their oil.
