• 4 eggs, ½ halloumi cheese (100g) cut into small cubes
• ½ package (100g) feta cheese, crumbled
• 2 tablespoons olive oil
• 1 teaspoon ketchup
• 1 teaspoon ketchup

METHOD
1. In a large frying pan, heat the olive oil and add the grated tomatoes. Let them simmer over medium heat for 10–12 minutes, until the sauce thickens and becomes rich.
2. Add the halloumi and let it lightly brown in the sauce. Add the feta, ketchup, salt, and pepper, and stir to combine the flavors.
3. Lightly beat the eggs and add them to the pan. Stir gently until the eggs are set but remain juicy. Sprinkle with fresh mint and serve hot with toasted bread or pita.
