• 300 gr various greens (coriander, spinach, rocket, chicory, etc.)
• 1 teaspoon salt
• 2 spring onions
• ½ dry red onion
• 40 gr bulgur wheat
• 50 gr raisins
• ¼ teaspoon ground cloves
• ½ teaspoon cinnamon
• ½ teaspoon pepper
• 3 tablespoons olive oil
METHOD
For the dough:
1. Place the two types of flour in a bowl and add the olive oil. Rub it, meaning rub it with your fingers until coarse crumbs form. Add the water and knead. Finally, add the salt and knead until you have a soft dough.
2. Cover the bowl and let the dough rest for 30 minutes. Cut the dough into 100g pieces.
3. Shape them into balls, cover them, and set aside.
For the filling:
1. Chop the greens, add the salt, and rub them with your hands to wilt them. Add the bulgur wheat to 'soak up' the liquids. Add the olive oil, raisins, and spices.
2. Take a piece of dough and roll out a thin round sheet, place the filling inside. Roll it up like a log. Shape it into a snail coil. Place it in a greased baking pan. Repeat with the remaining ingredients. Brush with olive oil before baking.
3. Bake at 170°C for about 30 minutes, depending on your oven.
