1. Place the flour, salt, and sugar in the mixer bowl and mix with the dough hook.
2. Add the dry yeast, mix, and pour in the olive oil. Mix and gradually add the water. Knead for 5 minutes until you have a fluffy dough.
3. Cover with a towel and let it rise for 1 – 1 ½ hours.
Meanwhile, prepare the minced meat:
1. Pour the olive oil into a pan and when hot, sauté the onion. Add the minced meat, and when it turns white, pour in the wine. Let the alcohol evaporate and add the tomato paste. Mix well and add salt and pepper. Let it cool.
2. Place parchment paper in a rectangular baking pan or your oven tray (28x38cm) and spread the dough inside. Spread the tomato paste on top. Sprinkle with 1 cup of cheese and add the sautéed minced meat.
3. Add the mushrooms and the pepper. Sprinkle with the remaining cheese and bake in a preheated oven at 180°C fan for 20-25 minutes or until the pizza is golden brown. Let it cool slightly and garnish with the wild rocket leaves.
