Sweet Potato and Quinoa Burgers with Tahini Sauce

INGREDIENTS
For the Tahini Sauce
- • --- 200g tahini
- • --- juice of 2 lemons
- • --- 1 clove garlic
- • --- 1 tablespoon olive oil
- • --- ½ teaspoon salt
- • --- approx. ½ cup water
Sweet Potato Burgers
- • --- 1 kg boiled sweet potatoes
- • --- 4-5 tablespoons quinoa flour
- • --- 1 small (70g) tomato paste
- • --- 1 handful fresh coriander, finely chopped
- • --- 2 cloves garlic, minced
- • --- 1 tablespoon paprika
- • --- ½ teaspoon chili
- • --- ½ teaspoon ground cumin
- • --- 3 tablespoons tahini
- • --- juice of ½ lemon
- • --- Salt
- • --- Pepper
- • --- Olive oil for the baking tray
- • --- Quinoa flour for dusting
For Serving
- • --- Greek pitas
- • --- 3-4 tomatoes
- • --- 4-5 cucumbers
- • --- lettuce
- • --- Coriander
METHOD
- 1. Place all ingredients for the tahini sauce in a blender and blend until a smooth, homogeneous mixture is formed. Adjust the taste with salt or lemon and the consistency with water. Serve with a little finely chopped parsley.
- 2. Place all ingredients for the burgers in a bowl and mix well! If the mixture is too wet, add more quinoa flour.
- 3. Shape into burger patties, dust with flour, and bake in a preheated oven at 200 °C for 15-20 minutes until nicely browned. Serve the burgers in Greek pitas with cucumber, tomato, and tahini sauce.
