Stuffed Chicken Patties with Mashed Potatoes and Mushroom Sauce

INGREDIENTS
For the Patties
- • --- 1 kilo ground chicken
- • --- 2 medium carrots, grated
- • --- 1 medium onion, finely chopped
- • --- 1 cup finely chopped parsley
- • --- 1 teaspoon ketchup
- • --- 1 teaspoon mustard
- • --- 1 tablespoon Worcestershire sauce
- • --- ¼ cup milk
- • --- 2 slices bread or breadcrumbs, as much as needed
- • --- 1 teaspoon salt
- • --- a little black pepper
- • --- ½ teaspoon garlic powder
- • --- ½ teaspoon paprika
- • --- ½ teaspoon oregano
- • --- ½ teaspoon vegetable broth powder
- • --- 2 tablespoons olive oil
- • --- 2 tablespoons butter for brushing at the end
For the Filling
- • --- 400g grated mozzarella
- • --- 250g cream cheese
For the Mushroom Sauce
- • --- 1 kilo mushrooms, sliced
- • --- 1 medium onion, finely chopped
- • --- 2 tablespoons olive oil
- • --- salt
- • --- black pepper
- • --- 1 sprig rosemary
- • --- 1/3 cup dry white wine
- • --- 250ml heavy cream
For the Mashed Potatoes
- • --- 1 kilo potatoes
- • --- 80g unsalted butter
- • --- 250ml heavy cream
- • --- salt
- • --- black pepper
METHOD
For the Patties:
- 1. Place all ingredients in a bowl except for the butter and knead very well. If using bread, soak it in the milk for a short while.
- 2. In another bowl, mix the mozzarella with the cream cheese. Take a small amount of the mince mixture and form it into a ball.
- 3. Flatten it in your palm, making an indentation in the middle, and place about 1 tablespoon of the cheese mixture inside.
- 4. Close carefully and place the patty on a baking tray lined with non-stick parchment paper. Repeat with the remaining ingredients.
- 5. Bake in a preheated oven at 180°C until golden brown, about 35-40 minutes.
For the Mushroom Sauce:
- 1. Pour the olive oil into a pan, and when hot, add the onion. Let it sauté, then add the mushrooms. Sauté until all their liquids evaporate, season with salt and pepper, and add the rosemary.
- 2. Deglaze with the wine and let the alcohol evaporate. Pour in the cream, and when it thickens, the sauce is ready.
- 3. Meanwhile, prepare the mashed potatoes: Peel the potatoes, cut them into small pieces, and put them to boil! Once they boil, salt them.
- 4. Once they are ready, drain them and place them in a bowl. Mash them with a special tool. Add extra salt if needed, pepper, butter, and cream. Mash well until you have a fluffy mash.
