Salmon with Bread Crust and Aromatic Herbs

INGREDIENTS
• 2 pieces (2x150g) salmon
• 2 slices whole wheat bread
• Fresh basil
• Fresh rosemary
• Fresh parsley
• 1 teaspoon Mustard
• Salt
• Pepper
• 50ml Olive oil
• 200g Wheat (grain)
• A little dry white wine
• 1 liter Vegetable stock
• 50g Zucchini
• 50g Broccoli
METHOD
1. Soak the wheat overnight in water. The next day, prepare the stock we will cook the wheat in.
2. Heat the olive oil in a pan and add the wheat. Stir for about 1 minute, then add the wine and stir for 2-3 minutes until the quantity is reduced by half. Add enough stock to cover the wheat, and once it absorbs the stock, add more and repeat this process until our mixture is cooked and creamy. Add salt and pepper.
3. Place the salmon pieces on a baking tray. In a blender, put the bread, salt, pepper, and our aromatic herbs; blend until the bread is crumbled and has taken on a greenish color. Spread mustard on the top side of the salmon and stick the bread mixture onto it. Bake in the oven at 180°C-200°C for 14 minutes.
On a deep plate, place half the amount of wheat and one piece of salmon, accompany with boiled vegetables (zucchini and broccoli) or grilled vegetables.
