• 8 square slices of ham (approx. 140g), cut into small squares
• 8 slices of pepperoni salami (approx. 50g), cut into small pieces
METHOD
1. In a bowl, whisk the eggs well and add the oil, milk, and tomato juice. Mix and then add the flour, baking powder, oregano, olives, ham, and pepperoni. Mix thoroughly.
Place paper liners in a 12-cup muffin tin. Use an ice cream scoop to portion the batter into the liners. Personally, I put 2 scoops in each cup.
Bake the muffins in a preheated oven at 180°C for 20 minutes.
