1. Put sunflower oil in a deep frying pan and when it heats up, place one pappadam at a time. It will puff up in 2–3 seconds.
2. Press it down lightly with a slotted spoon as soon as you put it in the pan for even puffing. Remove it immediately and let it rest on a rack or on a plate lined with kitchen paper.
3. Do not leave them in for too long as they burn easily. Pappadams are never served alone. They are usually accompanied by mango chutney.
