Oven-Baked Octopus with Wine and Spices
INGREDIENTS
For 4 servings
• 2 small octopuses, about 1500g each
• ¼ cup (60g) olive oil
• 4 tablespoons (40g) red wine vinegar
• ⅔ cup (170ml) dry red wine
• 4 bay leaves
• 2 cloves of garlic
• 1 teaspoon (5g) black peppercorns
• 2 cinnamon sticks
METHOD
1. We buy our octopuses already cleaned from the fish market. All we need to do is rinse them very well.
2. In a bowl, combine the olive oil, vinegar, and wine, and mix. Add the bay leaves, garlic, peppercorns, and cinnamon sticks. Place the octopuses inside and cover the bowl with plastic wrap. Refrigerate overnight. It's best to turn them once for even marinating.
3. The next day, preheat the oven to 180°C (350°F) on the fan setting. Cut a large piece of aluminum foil and place a large piece of non-stick parchment paper on top of it.
4. Place one octopus on top and gather the edges like a pouch. Pour half of the marinade along with the herbs and spices inside. Seal the pouch tightly and place it on the baking tray. Repeat the process with the remaining ingredients.
5. Bake in the preheated oven for 2 hours. Open the pouches, drain the liquids, and serve.
