• 7-8 wild mushrooms (from under the 'Anathrikes' trees)
• 6 tablespoons olive oil
• 3 eggs
• 1 teaspoon salt
METHOD
1. Gather the mushrooms found under the 'Anathrikes' (a type of tree/shrub). Wipe them clean with a damp paper towel or cloth. Cut off the stem and slice them vertically.
2. Pour the olive oil into a frying pan and once it heats up, add the mushrooms. Fry them until all the liquid from the mushrooms has evaporated and they start to brown.
3. Sprinkle them with salt and crack the eggs over the mushrooms. Using a wooden spoon, stir everything together so the eggs mix well with the mushrooms. Serve while hot.
