• 1 cup (130g) Anari cheese (Anthotyro or sweet Mizithra), grated on the coarse side of the grater
• 1 tablespoon (5g) dried mint or 1/3 cup (10g) fresh chopped mint
• 1/3 teaspoon black pepper
• 2 eggs
For the Topping
• 1 egg beaten with 2 tablespoons milk
• 2 tablespoons (20g) black sesame seeds
METHOD
For the Dough:
1. In a large bowl, place the flour and salt and mix. Add the Unsalted Butter cut into cubes and rub with your fingertips until coarse crumbs form.
2. Add the egg and mix. Add the yogurt and knead until you have a soft dough.
3. Cover the bowl and set aside for 20 minutes to 'rest'.
Prepare the Filling:
1. In a bowl, combine the Halloumi, Anari, mint, pepper, and mix. Add the eggs and mix.
2. Cut the dough into 20-22 pieces of 45g each. Sprinkle the work surface with a little flour and roll out a round sheet about 12 cm. Place 1 tablespoon of the filling in the center and close the little cheese pies, leaving a little margin on the bottom sheet. Use the index finger of your right hand to fold the edge inwards. Alternatively, seal the little pies with a fork.
3. Place the little cheese pies on a baking tray lined with non-stick parchment paper. Brush with the egg and milk mixture and sprinkle with the black sesame seeds. Bake in a preheated oven at 180°C for 35 minutes, until golden brown.
