• 2-3 tablespoons powdered sugar, plus extra for decoration
• 2 sachets vanilla sugar
• 1 package (200g) cream cheese
• 1 lime, zest and juice
• Strawberries
• 1 cup milk
• Coarsely ground pistachios (from Aegina)
• A little brandy or some liqueur
METHOD
1. Place the heavy cream, sugar, and vanilla in the bowl of a mixer. Whip well until the cream is light and fluffy.
2. Lower the speed and add the cream cheese, lime juice, and zest. Mix until fully incorporated into the cream.
3. Cut 3 fairly large sheets of plastic wrap and spread them out on your work surface. Slice the strawberries. Mix the brandy into the milk and quickly dip the ladyfingers on both sides.
4. Arrange the dipped ladyfingers in groups of three on the plastic wrap with the sugared side facing up. Spread the cream over the ladyfingers with a spatula and place the sliced strawberries on top. Sprinkle with pistachios.
5. Carefully roll up your dessert and place it in the refrigerator for 3-4 hours, or preferably overnight. Decorate as you like. Cut into thick slices and serve.
