Homemade Healthy Greens Pie with Spinach, Quinoa, and Cranberries

INGREDIENTS
For the Dough
• 700 Whole wheat flour
• 1 1/2 Vinegar
• 1 Salt
• 3 Olive oil
• 320 - 350 Water
For the Filling
• 80 Olive oil
• 280 Fresh onion, finely chopped
• 600 Spinach, in medium pieces
• 1 Bunch of coriander
• 1 Leek
• 1/3 Cup fresh lemon juice
• 80 Quinoa/Bulgur, raw
• 240 Diet feta cheese, in pieces
• 20 Mint, finely chopped
• 1/2 Cup dried cranberries
• 1 Pinch of cinnamon
• 1 Pinch of salt and ground pepper
• a little Sesame seeds and black cumin seeds
METHOD
1. Place the whole wheat flour in a bowl with a little salt. Then, add the olive oil and rub the mixture well with your fingers. Add the lukewarm water along with the vinegar and knead until you have a fluffy dough. Cover the dough with plastic wrap and set aside to rest.
2. Chop the greens (spinach and herbs). Add all the filling ingredients, with the olive oil and lemon juice last. Mix well. Roll out a thin sheet of dough and add the filling. Roll it up like a log. Brush with a little water and sprinkle with sesame seeds and black cumin seeds. You can make one large greens pie or small individual ones.
3. Bake in a preheated oven at 210°C (convection setting) for 45 minutes.
