Homemade Chicken Pie with Leftover Chicken

(Makes 8 pieces)
INGREDIENTS
• --- 400 g leftover roasted or boiled chicken, finely chopped
• --- 3 eggs
• --- 200 g strained yogurt
• --- 150 ml milk
• --- 2 tablespoons olive oil
• --- 160 g whole wheat flour
• --- 2 teaspoons baking powder
• --- 80 g grated halloumi
• --- 60 g grated light cheese or dried anari cheese
• --- 2 sweet red peppers, finely chopped
• --- 1 spring onion, finely chopped
• --- 2 tablespoons fresh mint or parsley, finely chopped
• --- 1 teaspoon dried oregano
• --- 1 teaspoon salt
• --- 1/3 teaspoon black pepper
• --- 2 tablespoons sesame seeds
METHOD
1. In a large bowl, add the chicken, eggs, yogurt, milk, and olive oil, and mix well.
2. Add the flour, baking powder, and cheeses, and mix until a uniform mixture is formed.
3. Add the peppers, spring onion, mint, oregano, salt, and pepper, and mix.
4. Spread the mixture into a greased baking pan or line with parchment paper brushed with olive oil. Smooth the surface with the back of a spoon and sprinkle with a little sesame seeds.
5. Bake in a preheated oven at 180°C for 30-35 minutes until golden brown. Let it cool for about 10 minutes before slicing and serving.
