1. In a bowl, mix the flour, fine semolina, yeast, sugar, cinnamon, and salt. Add the olive oil, vinegar, ground onion, and mix. Gradually add the water and knead the dough.
2. Let the dough rest briefly, then add the coarsely grated and cubed halloumi, the fresh mint, and the dried mint. Mix well and cut into 6-8 'halloumoties' (stuffed breads). Place them on a baking tray lined with non-stick parchment paper.
3. Let them rise for about ½ - 1 hour and bake in a preheated oven at 180°C (350°F) for 45-50 minutes, or until golden brown.
