Recipe from Niki Chronia from Rizokarpaso (a region in Cyprus)
INGREDIENTS
• 2 large onions
• ½ kilo fresh green beans (louvi), cleaned
• 6-8 ripe large tomatoes
• ½ cup olive oil
• 1 teaspoon salt
• 1/3 cup vinegar
METHOD
1. Finely chop the onions. In a pot, pour in the olive oil, and once it heats up, add the onions.
2. Sauté them and add the finely chopped tomatoes. Add a little salt so they release their liquids, and when they thicken (about 3-4 minutes), add the green beans.
3. Let the dish boil again, completely lower the heat, and simmer the green beans until they are cooked through. Before turning off the heat, add the vinegar and stir.
