1. In a blender, place the sugar and vanilla. Blend until they become a powder. In a bowl, place the 2 egg whites, the sugar-vanilla mixture, and the honey. Whisk until the ingredients are combined and add the slivered almonds.
2. Mix with a spoon so that the almonds are coated. Line 2 baking sheets with non-stick parchment paper. Using a small spoon, take some mixture and place it on the baking sheet. Spread it out with a spoon or fork, forming circles.
3. Do the same with all the mixture. Bake in a preheated oven at 150°C (300°F) for 20-25 minutes. Let the Florentines cool and serve. If you like, melt the chocolate in a double boiler (bain-marie) and dip half of the Florentines in it!
