• 2 ½ tablespoons fresh mint, finely chopped, or 2 teaspoons dried
• 1 teaspoon baking powder
• 1 teaspoon black pepper
METHOD
1. Preheat the oven to 180° C. In a bowl, crumble the feta, the anari cheese, and add the halloumi, eggs, mint, baking powder, and black pepper. Mix well.
2. Grease the base of a rectangular baking pan measuring 22x30cm with butter. Lay down 4 sheets of phyllo dough, brushing them with butter. Place the filling on top and spread it evenly with a spoon. Fold the overhanging edges of the dough inwards, brushing them with a little butter.
3. Crumple up the remaining 6 sheets of phyllo dough one by one and place them over the filling. Brush the top sheets with the remaining butter and bake in the preheated oven for 40 minutes, or until the cheese pie is golden brown. Let it cool slightly, cut into pieces, and serve.
