• 3 well-rounded tablespoons (60g) unsalted butter, at room temperature
• 3-4 slices of fresh halloumi cheese
• 1 beaten egg
• Coarse salt
• Sprigs of rosemary for decoration
METHOD
1. In a container, pour the water and add the yeast and sugar. Stir until the yeast dissolves. Set aside for 5 minutes.
2. In the mixer bowl, add the flour and salt and mix. Pour in the yeast mixture and knead. Add the butter and the egg and knead until you have a fluffy dough. Cover the bowl and let the dough rise for 1 – 1 ½ hours.
3. Cut the halloumi into 22 small cubes. After it has risen, cut the dough in half and then into 22 pieces of 30-35g each. Roll the dough into small balls.
4. Flatten the dough and place 1 piece of halloumi in the center. Close the dough and reshape the balls. Place them seam-side down on a baking sheet lined with non-stick parchment paper, arranging them in the shape of a tree.
5. Brush with egg, sprinkle with coarse salt, and decorate with the rosemary sprigs. Leave the buns aside for 20 minutes to rise again, then bake in a preheated oven at 180°C (fan-assisted) for 35-40 minutes, or until golden brown.
