1. Prepare the stuffing: In a saucepan, add the olive oil and butter. When the butter melts, sauté the onion. Then, add the ground meat and sauté for 7-8 minutes or until it turns white. Stir and deglaze with the wine.
2. When the alcohol evaporates, add the rice, chestnuts, raisins, figs, apricots, pistachios/pine nuts, cinnamon, cumin, black pepper, and salt. Stir and pour in the water.
3. Lower the heat, cover the saucepan, and simmer for about 15 minutes or until the rice softens and absorbs all the water. Stir, sprinkle with parsley, and serve.
