•1 package (200g) halloumi cheese, cut into 8 small sticks
•16 strips of bacon
•3 tablespoons honey
•3 tablespoons mustard
•1 teaspoon salt
•1 pinch black pepper
•½ cup dry white wine
•5-6 sprigs of thyme
METHOD
1. In a bowl, combine the honey, mustard, salt, and pepper. Mix well and add the thighs. Leave them in the fridge for at least half an hour to marinate.
2. On a cutting board, lay out 2 slices of bacon, side-by-side so they touch. Place a chicken thigh on the edge with its open side facing up. Place a stick of halloumi on the edge of the chicken and carefully roll it up. To secure it better, insert 2 toothpicks, trying to secure the edges of the bacon.
3. Place the rolls in a baking dish and pour the marinade over them. Pour the wine into the dish and place the sprigs of thyme. Bake in a preheated oven at 180°C (350°F) for 40 minutes or until the bacon is browned and the chicken is cooked through.
