1. In a bowl, combine the eggs, milk, vanilla, sugar, cinnamon, and salt. Whisk well. Dip each slice of bread into the egg mixture for a few seconds per side, until it absorbs the liquid but doesn't become soggy.
2. Add 1 tablespoon of butter to a non-stick pan over medium heat. Once it's hot and melted, place the avgofetes (French toast) in the pan. Fry for 2-3 minutes per side, until golden brown and crispy on the outside, and fluffy on the inside.
3. Serve with a pat of butter on top (it will melt from the heat) and honey. Alternatively, you can serve with maple syrup, carob syrup, powdered sugar, fresh fruit, nuts, or grated chocolate.
