• 1/2 cup (125g) unsalted butter, room temperature
• 2/3 cup (160g) sugar
• 1/2 cup (65g) soft light brown sugar
• 2 eggs (Medium)
• 2/3 cup (170ml) milk, room temperature
METHOD
Preparation:
1. Preheat the oven to 170°C (340°F) and grease and flour a 24cm round springform pan.
For the Base:
1. In a saucepan, combine the brown sugar, unsalted butter, and cinnamon. Heat until the sugar dissolves. Reduce the heat to medium and boil for 2-3 minutes. Add the salt, stir, and pour the mixture into the bottom of the pan.
2. Peel the apples, remove the cores, and slice them. Arrange the slices overlapping each other in the pan, covering the entire base.
3. Dice any remaining apple pieces and add them to the cake batter.
Making the Cake:
1. In a bowl, mix the flour, baking powder, cinnamon, salt, vanilla sugar, and walnuts. In the mixer bowl, combine the unsalted butter, sugar, and brown sugar. Beat for 2-3 minutes until light and fluffy. Add the eggs one by one and continue beating until you have a fluffy mixture.
2. Lower the mixer speed and gradually add half of the flour mixture. Pour in the milk, then add the remaining flour. Add any remaining apple pieces and stop mixing with the machine. Fold everything together with a spatula and spoon the cake batter over the apples.
3. Bake in the preheated oven for 40 minutes. Let it cool in the pan for 15 minutes before serving. If you like, serve each slice with a scoop of ice cream of your choice.
